Simple Chickpea Soup

Chickpeas, also known as garbanzo beans, are loaded with folate, zinc, protein, and dietary fiber. It’s a great idea for vegetarians to toss these little guys in meals throughout the week.

Ingredients

  • 1 clove fresh garlic, minced
  • 1 cup diced bell peppers
  • 1 cup diced yellow onions
  • 3 tsp. lemon juice
  • 3 cups chicken broth
  • ½ tsp. ground red pepper
  • 1 tsp. ground ginger
  • ½ tsp. cumin
  • 4 cups chickpeas, cooked
  • ½ tsp. all-purpose seasoning
  • 2 cups sliced carrots
  • 3 Tbsp. tomato paste
  • 1 cup cubed Russet potato

Directions

  • Combine all ingredients in a large saucepan.
  • Cook on medium-high heat for 15 minutes. Simmer for another 10 minutes, then serve.
