Simple Chilled Borscht
If you chill the beets beforehand, you can serve this easy and beautiful soup without chilling.

- 1 can (16 oz.) beets
- 1 cup orange juice
- 2 Tbsp. lemon juice
- 1⁄2 cup chopped onion
- 1 large potato, cooked and peeled
- 1⁄2 cup sour cream
- 1⁄4 cup heavy cream
- 1⁄2 tsp. salt
- 1⁄8 tsp. ground white pepper
- 1⁄4 tsp. dried dill weed
- Combine all ingredients in food processor or blender. Process or blend until smooth.
- Cover and chill for 3 hours before serving.
