Simple Glazed Baby Carrots
Using tender baby carrots saves you from the work of having to peel and chop regular-size carrots.

- 1 Tbsp. olive oil
- 1 lb. baby carrots
- 1 cup orange juice
- 1 cup water
- 2 Tbsp. butter
- 2 Tbsp. brown sugar
- 1 Tbsp. chopped parsley
- Heat the olive oil in a skillet over medium heat.
- Add the carrots, orange juice, and water. Turn down the heat, cover, and simmer until the carrots are tender (about 12 minutes). While the carrots are cooking, melt the butter and brown sugar in a saucepan, stirring to dissolve the sugar.
- Add the brown sugar mixture to the carrots. Cook for another 5 minutes, or until the liquid is reduced and the carrots are nicely glazed. Garnish with parsley before serving.
