Simple Low-Sugar Custard

- 1 cup heavy cream
- 1 large egg
- 1 large egg yolk
- 1⁄2 cup erythritol or granular Swerve
- 1 tsp. vanilla extract
- In a small saucepan over low heat, bring cream to a simmer.
- In a small bowl, whisk together remaining ingredients until eggs are foamy and sweetener is dissolved.
- Slowly pour egg mixture into cream, whisking constantly to combine well. Stir the mixture continuously until it thickens. Do not let it come to a boil. Pour mixture through a fine strainer to remove any lumps. Serve immediately, or store in the refrigerator for one day.
