Simple Roasted Garlic with Thyme
When garlic is roasted it becomes nutty and sweet. Spread it onto crackers or use it for an especially flavorful garlic bread.

- 3 heads garlic
- 1⁄2 tsp. salt
- 1⁄4 tsp. ground white pepper
- 6 sprigs thyme
- 1 Tbsp. olive oil
- 2 tsp. lemon juice
- Preheat oven to 375°F. Remove some of the papery skins from the garlic heads. Cut 1 inch from the top of each head. Place cut side up in a cast-iron pan or small baking dish.
- Sprinkle with salt and pepper and drizzle with olive oil. Sprinkle with lemon juice. Top with thyme sprigs. Bake for 45 minutes or until garlic is golden and soft.
- Let cool for 15 minutes, or until garlic is cool enough to handle. Squeeze cloves out of skins; discard skins. Serve as is, or mash and serve as an appetizer spread.
