- 8 medium plum tomatoes, chopped
- 1 medium red onion, peeled and chopped
- 1 small jalapeño pepper, seeded and minced
- 3 cloves garlic, peeled and minced
- 1⁄4 tsp. salt
- 2 Tbsp. lime juice
- Combine all ingredients in a medium bowl. Cover and refrigerate for 3 hours before serving.
