Simple Shrimp Scampi
This dish is easy to prepare and extremely versatile. Pour it over zucchini noodles or a plate of spinach. If you have room for some extra carbohydrates, try spooning it over spaghetti squash.

- 1 lb. cooked medium shrimp
- ¾ cup butter
- 2 cloves garlic, minced
- 1 Tbsp. lemon juice
- Remove tails from shrimp. Set shrimp aside.
- Melt butter in a large skillet over medium heat. When butter is hot, add garlic and sauté until translucent, 3–4 minutes. Add lemon juice and shrimp and cook over medium heat until shrimp is hot, about 2 minutes.
