Simple Sweet and Spicy Carrot Soup

Sweet carrots get even sweeter as they simmer in their own juices. Spiced up with delicious ginger and subtle shallots, the carrots take on a depth of flavor that makes this soup perfect for any occasion.

  • 2 Tbsp. ginger, grated
  • 2 shallots, minced
  • 4 cups purified water
  • 1 lb. baby carrots
  • 1⁄4 tsp. cayenne pepper


  • In a pot over medium heat, combine the ginger and shallots with 1⁄4 cup of the water. Sauté for 4 to 5 minutes, or until shallots are soft and translucent.
  • Add remaining water, carrots, and cayenne pepper to pot, and bring to a boil. Cover and reduce heat to low.
  • Simmer for 30 to 45 minutes or until carrots are fork tender. Remove from heat. Using an immersion blender, emulsify until desired thickness is achieved.
