Simplest Hollandaise Sauce

If you prefer not to use the microwave, you can heat up the butter in a saucepan over low heat and then add it to the blender.

Ingredients

  • 8 large egg yolks
  • ¼ tsp. salt
  • 2 Tbsp. fresh lemon juice
  • 1 cup unsalted butter

Directions

  • Put egg yolks, salt, and lemon juice in a blender and blend until smooth. Put butter in a microwave-safe dish and microwave until melted and hot, about 45–60 seconds.
  • With egg yolk mixture in blender, turn blender on low speed and slowly pour in the butter. The sauce will thicken.
