Skewered Chicken Tenders with Sate
High protein is what this appetizer, or light lunch, is all about. Tenders make an excellent, healthy adjunct to any diet. You can get them fresh or buy a big bag of frozen tenders that defrost in just a few minutes.

- 6 large chicken tenders (1 lb.)
- 1 cup barbecue sauce
- ¼ cup peanut butter
- 1 Tbsp. lime juice
- 1 tsp. sugar
- 2 Tbsp. tamari
- Preheat the broiler to 350°F. In a large bowl, toss the tenders with the barbecue sauce. Thread each tender on a small wooden skewer. Broil for 5 minutes per side.
- Whisk peanut butter, lime juice, sugar, and tamari in a small bowl. Serve sate sauce alongside chicken skewers.
