Skillet Ziti with Ground Beef and Spinach

This concoction becomes cheeseburger macaroni if you add chunks of American cheese to it at the end. It becomes “goulash” if you add tomato sauce. Kids, young and old, love it!

  • 1 Tbsp. olive oil
  • ½ cup diced onion
  • ¼ cup diced celery
  • ¼ cup diced carrots
  • 1 tsp. minced garlic
  • 1 lb. ground beef
  • 1 bag (5 oz.) baby spinach
  • 1 tsp. salt
  • ½ tsp. ground pepper
  • 16 oz. ziti, cooked and drained


  • In a large skillet over medium-high heat, heat oil. Add onion, celery, and carrots; cook, stirring often, until translucent, about 5 minutes. Add garlic; sauté for 30 seconds. Add the ground beef; cook, breaking up clumps with a wooden spoon, until no longer pink, about 5 minutes. Stir in the spinach, salt, and pepper; cook until wilted, about 2 minutes. Stir in the cooked ziti; stir over low heat to evenly heat the mixture.
