Slow Cooker Black Beans
Black beans are a versatile ingredient. Infuse flavor into the beans and cooking liquid by adding a roasted jalapeño pepper or dried spices such as ground cumin or ground chili pepper to them while cooking.

- 1 bag (16 oz.) dried black beans, soaked overnight
- Water, as needed
- 2 tsp. salt
- Drain and rinse the soaked beans, discarding the water. Place beans in a large sauce pan and cover with fresh water. Boil on high heat for 10 minutes, then drain.
- Into a 4-quart slow cooker, add black beans, salt, and enough fresh water to cover beans by 2 inches. Cover and cook on low heat for 3–6 hours, or until tender.
