Slow Cooker Chili with Beans

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. lean ground beef
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 can (15 oz.) kidney beans, rinsed and drained
  • 2 cups vegetable broth
  • 1 Tbsp. chili powder
  • ½ Tbsp. chipotle powder
  • ½ Tbsp. cumin
  • 1 tsp. thyme
  • 1 Tbsp. oregano
  • 2 cups fresh tomatoes, diced
  • 1 Tbsp. tomato paste
  • 1 Tbsp. cider vinegar
  • 2 tsp. salt

Directions

  • Heat oil in a large skillet. Add beef and cook until no longer pink, breaking the meat up with a spoon while it cooks. Add the onion, bell pepper and garlic and cook until the onions and peppers are soft, about 7 minutes.
  • Transfer the meat and vegetable mixture to a 4-quart slow cooker, and add the remaining ingredients. Cover and cook on low heat for 5 hours.
