Slow Cooker Coconut Milk
The milk and “used” coconut solids can be frozen for later use in curries, sauces, puddings, and cakes.

- 2 cups coconut pieces
- 2 cups water
- Remove any remaining coconut shell or brown lining from the coconut meat. Put the coconut meat and water in the blender. Blend until smooth.
- Transfer to the slow cooker. Cover and heat on a low setting for 2 hours. Strain.
