Slow Cooker Coconut Rice Pudding
Versions of rice pudding exist in many cuisines.

- 9 Tbsp. butter, divided
- 1 cup long-grain white rice
- 1 quart soymilk
- ⅛ cup shredded coconut, sweetened
- 1 cup sugar
- ¼ tsp. salt
- 2 tsp. ground cinnamon
- Grease a 4-quart slow cooker with 1 tablespoon of butter. Cut the remaining butter into chunks and add it to the slow cooker. Add the rice, soymilk, coconut, sugar, and salt. Cover and cook on low heat for 2–3 hours, or until rice is tender. Serve with a dusting of cinnamon.
