Slow Cooker Corn on the Cob with Vegan Chipotle Butter
In Mexico, corn on the cob is dressed with much for than plain butter. Here we cook the corn in a slow cooker and then rub it with a spiced butter mixture.

- 6 ears corn, husks removed
- Water, as needed
- 3 Tbsp. vegan butter, softened
- 1⁄2 tsp. chipotle powder
- 1⁄2 tsp. salt
- Place the corn in a 4-quart slow cooker and cover with water until it is 1 inch from the top of the slow cooker. Cook on high heat for 2 hours.
- Meanwhile, combine the butter, chipotle powder, and salt in a small bowl. Rub the cooked corn with a small spoonful of the spiced-butter mixture before serving.
