Slow Cooker Curried Chicken in Coconut Milk
If you can't find chicken base, then you can use chicken bouillon concentrate.

- 1 small onion, peeled and diced
- 2 cloves of garlic, peeled and minced
- 1½ Tbsp. curry powder
- 1 cup coconut milk
- ¾ tsp. chicken base
- 8 chicken thighs, skin removed, cut into bite-sized pieces
- 4 cups cooked rice
- Add the onion, garlic, curry powder, coconut milk, and broth base to the slow cooker. Stir to mix. Add the chicken. Cover and cook on low for 6 hours. Use a slotted spoon to remove the thighs to a serving bowl. Whisk to combine the sauce and pour over the chicken. Serve immediately with rice.
