Slow Cooker Curried Chicken in Coconut Milk

If you can't find chicken base, then you can use chicken bouillon concentrate.

  • 1 small onion, peeled and diced
  • 2 cloves of garlic, peeled and minced
  • 1½ Tbsp. curry powder
  • 1 cup coconut milk
  • ¾ tsp. chicken base
  • 8 chicken thighs, skin removed, cut into bite-sized pieces
  • 4 cups cooked rice


  • Add the onion, garlic, curry powder, coconut milk, and broth base to the slow cooker. Stir to mix. Add the chicken. Cover and cook on low for 6 hours. Use a slotted spoon to remove the thighs to a serving bowl. Whisk to combine the sauce and pour over the chicken. Serve immediately with rice.
