Slow Cooker Garlic Confit

Cook garlic with olive oil in a slow cooker to create this versatile condiment. Use the garlic and infused oil to make vinaigrettes, whip it into mashed potatoes, mash it and spread it onto crostini or pizza, or drizzle it over cooked vegetables. It is important to store the garlic and oil in the refrigerator or freezer.

  • 3 cups olive oil
  • 5 heads of garlic, cloves peeled


  • Add all ingredients to a 4-quart slow cooker. Make sure there is enough oil to cover all the garlic cloves. Place the cover on the slow cooker and cook on low heat for 4 hours, or until the garlic is tender.
  • Remove the garlic with a slotted spoon and place in glass jars. Pour the oil over the garlic and cool quickly. Cover and store in the refrigerator or freezer.
