Slow Cooker Ginger Mango Beef

Ingredients

  • 2 tbsp. salt
  • 1 tbsp. minced garlic
  • 1 tbsp. ginger, grated or finely minced
  • 2 tsp. ground black pepper
  • 2½-3 lbs. chuck roast, cut into 2-3 pieces
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 ripe mango, peeled and chopped
  • 1⁄2 cup beef broth
  • 1⁄4 cup coconut aminos

Directions

  • In small bowl, mix together salt, garlic, ginger and pepper. Rub over pieces of chuck roast.
  • In 5-quart or larger slow cooker, combine onions, seasoned roast, bell pepper, mango, beef broth and coconut aminos. Cover; cook on low 6-8 hours until tender.
  • Using two forks, shred roasted beef. Mix with onion, bell pepper, mango and desired amount of cooking liquid.
  • Refrigerate leftovers.
