Slow Cooker Ginger Mango Beef

Ingredients
- 2 tbsp. salt
- 1 tbsp. minced garlic
- 1 tbsp. ginger, grated or finely minced
- 2 tsp. ground black pepper
- 2½-3 lbs. chuck roast, cut into 2-3 pieces
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 ripe mango, peeled and chopped
- 1⁄2 cup beef broth
- 1⁄4 cup coconut aminos
Directions
- In small bowl, mix together salt, garlic, ginger and pepper. Rub over pieces of chuck roast.
- In 5-quart or larger slow cooker, combine onions, seasoned roast, bell pepper, mango, beef broth and coconut aminos. Cover; cook on low 6-8 hours until tender.
- Using two forks, shred roasted beef. Mix with onion, bell pepper, mango and desired amount of cooking liquid.
- Refrigerate leftovers.
