Slow Cooker Kabocha Squash Mash
Kabocha is a popular Japanese squash. Peel it and remove its seeds as you would any squash and then cook it in a slow cooker with water until tender. Mash the squash and stir in vegan butter and salt for this colorful dish.

Ingredients
- 1 kabocha squash, peeled, seeded, and cubed
- 1 cup water
- 6 Tbsp. vegan butter
- 1 tsp. salt
Directions
- Add squash and water to a 6-quart slow cooker. Cover and cook over low heat for 6 to 8 hours, or until squash is tender.
- With a potato masher, mash the squash until smooth but a little chunky. Stir in butter and salt until well-mixed and creamy.
