Slow Cooker Marinated Artichokes

Ingredients

  • 2 boxes (9 oz.) fresh artichoke hearts
  • ½ cup olive oil
  • ¼ cup cider vinegar
  • 2 Tbsp. lemon juice
  • 3 bay leaves
  • 1 tsp. dried thyme
  • ½ tsp. salt

Directions

  • Combine all ingredients in a 2-quart slow cooker and stir well. Cover and cook over low heat for 2 hours. Store in a covered container in the refrigerator for up to 1 week.
