Slow Cooker Marinated Artichokes
Making your own marinated artichokes is easy with a slow cooker!

- 2 boxes (9 oz.) fresh artichoke hearts
- ½ cup olive oil
- ¼ cup cider vinegar
- 2 Tbsp. lemon juice
- 3 bay leaves
- 1 tsp. dried thyme
- ½ tsp. salt
- Combine all ingredients in a 2-quart slow cooker and stir well. Cover and cook over low heat for 2 hours. Store in a covered container in the refrigerator for up to 1 week.
