Slow Cooker Mediterranean Vegetable Stew

This classic stew is delicious with crusty bread.

Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 4 garlic cloves, peeled and chopped
  • 1 medium red onion, peeled and chopped
  • 1 medium red bell pepper, seeded and chopped
  • 1 small eggplant, chopped
  • ⅓ cup kalamata olives, pitted and chopped
  • 2 cans (15 oz.) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp. crushed red pepper
  • ½ tsp. dried oregano
  • ½ tsp. dried parsley
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • 3 Tbsp. minced chives

Directions

  • In a 4-quart slow cooker, add all ingredients except chives. Cover and cook on low heat for 4–6 hours. Serve topped with chives.
