Slow Cooker Parsnip Purée
Parsnips are pleasantly sweet and starchy. Make this vegan parsnip purée in a slow cooker.

- 5 medium parsnips, peeled and chopped
- 1⁄2 cup vegetable broth
- 1⁄2 cup unsweetened soy milk
- 1 tsp. salt
- 1 Tbsp. vegan butter
- Add the parsnips, vegetable broth, soy milk, and salt to a 4-quart slow cooker. Cover and cook over low heat for 4 hours.
- Using an immersion blender, purée parsnips. Stir in vegan butter and transfer to a serving dish.
