Slow Cooker Parsnip Purée

Parsnips are pleasantly sweet and starchy. Make this vegan parsnip purée in a slow cooker.

  • 5 medium parsnips, peeled and chopped
  • 1⁄2 cup vegetable broth
  • 1⁄2 cup unsweetened soy milk
  • 1 tsp. salt
  • 1 Tbsp. vegan butter


  • Add the parsnips, vegetable broth, soy milk, and salt to a 4-quart slow cooker. Cover and cook over low heat for 4 hours.
  • Using an immersion blender, purée parsnips. Stir in vegan butter and transfer to a serving dish.
