Ingredients

  • 2 Tbsp. olive oil
  • 2 leeks, trimmed, whites and light green parts sliced thick
  • 4 medium Yukon Gold potatoes, cut into 1" chunks
  • 1 cup vegetable broth
  • ½ tsp. salt

Directions

  • Add all ingredients to a 4-quart slow cooker. Cover and cook on high heat for 4 hours, or until the potatoes and leeks are tender.
