Slow Cooker Potatoes and Leeks in Broth

- 2 Tbsp. olive oil
- 2 leeks, trimmed, whites and light green parts sliced thick
- 4 medium Yukon Gold potatoes, cut into 1" chunks
- 1 cup vegetable broth
- ½ tsp. salt
- Add all ingredients to a 4-quart slow cooker. Cover and cook on high heat for 4 hours, or until the potatoes and leeks are tender.
