Slow Cooker Rice with Mushrooms and Tempeh
Serve with steamed vegetables or a green salad.

- 1 medium onion, chopped fine
- 4 oz. button mushrooms, chopped
- 1 cup short-grain white rice
- ½ lb. tempeh, cut into ½" cubes
- 1½ cups vegetable broth
- Place all ingredients in a 4-quart slow cooker and stir until just combined. Cover and cook on low heat for 2 hours, or until rice is tender.
