Slow Cooker Rice with Mushrooms and Tempeh

Ingredients

  • 1 medium onion, chopped fine
  • 4 oz. button mushrooms, chopped
  • 1 cup short-grain white rice
  • ½ lb. tempeh, cut into ½" cubes
  • 1½ cups vegetable broth

Directions

  • Place all ingredients in a 4-quart slow cooker and stir until just combined. Cover and cook on low heat for 2 hours, or until rice is tender.
