Slow Cooker Rosemary Fingerling Potatoes
Any small, new potatoes or fingerlings will work for this.

- 2 Tbsp. extra-virgin olive oil
- 1½ lbs. red-skin new potatoes, scrubbed well
- 2 sprigs fresh rosemary
- 1 tsp. salt
- ¼ tsp. ground black pepper
- 1 Tbsp. lemon juice
- Add olive oil, potatoes, rosemary, salt, and pepper to a 4-quart slow cooker. Cover and cook on low heat for 4 hours. Uncover and stir in lemon juice.
