Slow Cooker Rosemary Fingerling Potatoes

Any small, new potatoes or fingerlings will work for this.

  • 2 Tbsp. extra-virgin olive oil
  • 1½ lbs. red-skin new potatoes, scrubbed well
  • 2 sprigs fresh rosemary
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 1 Tbsp. lemon juice


  • Add olive oil, potatoes, rosemary, salt, and pepper to a 4-quart slow cooker. Cover and cook on low heat for 4 hours. Uncover and stir in lemon juice.
