Slow Cooker Steamed Artichokes
The flavors in this dish mimic the heavier artichoke hearts packed in oil. But when slow cooked with lemon, these artichokes are succulent and addictive. Choose artichokes that are all roughly the same size for consistent cooking time.

- 4 large artichokes
- 1 cup water
- 1 medium lemon, cut into eighths
- 2 Tbsp. lemon juice
- 1 tsp. mustard seeds
- 2 Tbsp. melted butter
- 1 Tbsp. finely minced chives
- Place the artichokes stem-side down in an oval 4- to 5-quart slow cooker. Pour the water into the bottom of the slow cooker. Add the lemons, lemon juice, and mustard seeds.
- Cook on low for 6 hours or until the leaves are tender. Serve with melted butter and chives
