Slow Cooker Tofu Scramble
Make this simple tofu scramble in a slow cooker. Feel free to add your favorite vegan cheese, vegan bacon, sausage, or vegetables to this basic recipe.

- 2 Tbsp. olive oil
- 1 package (16 oz.) firm tofu, drained and crumbled
- 2 cloves garlic, minced
- 1 tsp. turmeric
- ½ tsp. salt
- ¼ tsp. ground black pepper
- The juice of 1 lemon
- ¼ cup chopped chives
- Grease the bottom of a 4-quart slow cooker with olive oil. Add garlic, turmeric, salt, and pepper. Mix well. Cover and cook on low heat for 3 hours.
- About 3 minutes before the scramble is fully cooked, stir in the lemon juice. Sprinkle with chives before serving.
