Slow Cooker Vegan Bananas Foster
This decadent dessert of caramelized bananas in a caramel sauce served over ice cream was created in the 1950s at a restaurant in New Orleans. Make this vegan version in a slow cooker and serve it over vegan vanilla ice cream.

- 4 large bananas, peeled and cut into ½" pieces
- 2 quarts vegan vanilla ice cream
- In a 4-quart slow cooker, combine corn syrup, rum, vanilla extract, cinnamon, butter, and salt. Add bananas, cover, and cook on low heat for 1–2 hours.
- Serve over scoops of vegan ice cream.
