Slow Cooker Vegan Coconut Rice Pudding

- 1 cup white rice
- 1 quart soymilk
- 2 cans (14 oz.) coconut milk
- 2 Tbsp. shredded coconut
- 1 cup sugar
- 1 tsp. ground cinnamon
- ¼ tsp. salt
- Add all ingredients to a 4-quart slow cooker. Stir to combine. Cover and cook on low heat for 6 hours.
