Slow Cooker Vegan Cornmeal Mush
Make this traditional and inexpensive hot cereal in a slow cooker. It can be eaten sweet or savory depending on the toppings. Toppings that go well with cornmeal mush are: butter, shredded vegan cheese, brown sugar, maple syrup, molasses, and sorghum syrup.

- 2 cups yellow cornmeal
- 8 cups water
- 1 tsp. salt
- 3 Tbsp. vegan butter, divided
- Add cornmeal, water, salt, and 2 tablespoons butter to a 4-quart slow cooker. Cover and cook on low heat for 4 hours.
- Stir in an additional tablespoon of butter before serving.
