Slow Cooker White Beans
White beans are great in salads and soups. They also make a delicious dip when pureed with garlic, lemon juice, and olive oil.

- 1 bag (16 oz.) dried white beans, soaked overnight
- Water, as needed
- 2 tsp. salt
- 2 bay leaves
- Drain and rinse the beans, discarding the water. Place beans in a large sauce pan and cover with fresh water. Boil on high heat for 10 minutes, then drain and discard water.
- To a 4-quart slow cooker, add white beans, salt, bay leaves, and enough fresh water to cover beans by 2 inches. Cover and cook on low heat for 3–6 hours, or until tender.
- Once the beans are fully cooked, drain in a colander and remove the bay leaves.
