Smoked Whole Chicken with Applesauce

This savory yet sweet chicken is rubbed with a brown sugar seasoning and served with homemade applesauce.

Ingredients

  • 5 pounds whole chicken, inside parts removed and discarded
  • 1⁄4 cup brown sugar
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried thyme
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1⁄2 tbsp. chili powder
  • 1 tsp. salt
  • Wood chips, soaked in water
  • 4 apples, cored and chopped
  • 3⁄4 cup water
  • 1⁄4 cup sugar
  • 1⁄2 tsp. ground cloves
  • 1 tbsp. apple cider vinegar

Directions

  • Place chicken in a dish. In a bowl, combine brown sugar, paprika, thyme, onion powder, garlic powder, chili powder and salt. Rub mixture over chicken and wrap in plastic wrap. Refrigerate 8-12 hours.
  • Heat smoker to 225°F and add wood chips to smoker.
  • Place chicken on smoker and cook until internal temperature reaches 165°F. Add wood chips to smoker as needed. Cook time is approximately 45 minutes per pound.
  • In a saucepan, combine apples, water, sugar, cloves and apple cider vinegar. Cover and cook over medium-low heat until apples are soft, about 15 minutes. Allow to cool slightly, then mash with a potato masher until desired consistency is reached.
  • Serve immediately. Refrigerate leftovers.
