Smoked Whole Chicken with Applesauce
This savory yet sweet chicken is rubbed with a brown sugar seasoning and served with homemade applesauce.

Ingredients
- 5 pounds whole chicken, inside parts removed and discarded
- 1⁄4 cup brown sugar
- 1 tbsp. smoked paprika
- 1 tbsp. dried thyme
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1⁄2 tbsp. chili powder
- 1 tsp. salt
- Wood chips, soaked in water
- 4 apples, cored and chopped
- 3⁄4 cup water
- 1⁄4 cup sugar
- 1⁄2 tsp. ground cloves
- 1 tbsp. apple cider vinegar
Directions
- Place chicken in a dish. In a bowl, combine brown sugar, paprika, thyme, onion powder, garlic powder, chili powder and salt. Rub mixture over chicken and wrap in plastic wrap. Refrigerate 8-12 hours.
- Heat smoker to 225°F and add wood chips to smoker.
- Place chicken on smoker and cook until internal temperature reaches 165°F. Add wood chips to smoker as needed. Cook time is approximately 45 minutes per pound.
- In a saucepan, combine apples, water, sugar, cloves and apple cider vinegar. Cover and cook over medium-low heat until apples are soft, about 15 minutes. Allow to cool slightly, then mash with a potato masher until desired consistency is reached.
- Serve immediately. Refrigerate leftovers.
