Smoky Chipotle Salsa
Chipotles add a pleasing smokiness to this salsa, which also has plenty of sweetness from roasted tomatoes. Serve this as a table salsa with chips for a nice change of pace.

Ingredients
- 8 medium red tomatoes
- 1 yellow onion, halved
- 4 dried chipotle chilies
- 2 cloves garlic, peeled
- ½–1 cup water
- ½ tsp. salt
Directions
- Roast tomatoes, onion, chilies, and garlic on a comal or cast iron skillet until they are nearly blackened.
- Place the vegetables and chilies in a blender and add a little water. Blend until smooth. Season with salt to taste.
