Sopes are little boats made from corn flour (masa harina); they can be filled with almost anything!

- 1 cup masa harina
- 1⁄8 tsp. baking powder
- 1⁄4 tsp. salt
- 3⁄4 cup water
- 3⁄4 cup canola oil
- Combine masa harina, baking powder, salt, and water in medium bowl. Use your hands to mix dough until a smooth ball is formed. Add more water if needed.
- Divide dough into eight equal pieces and shape into balls. To shape sopes, place a dough ball between two pieces of plastic wrap. Use a flat-bottomed pot to flatten ball into a 2 1⁄2-inch circle, about 1⁄4 inch thick. Fold up the sides of the circle to make a 1⁄2-inch wall all the way around the edge.
- Heat a dry skillet over high heat and brown the sopes on the flat side only, for about 1 minute.
- In a small pot, heat oil to 350°F. Cook one sope at a time in the hot oil for 1 to 2 minutes, until browned. Drain sopes upside down on paper towels.
