- 6 large eggs, separated
- ½ cup buttermilk pancake mix
- ½ tsp. salt
- ½ cup sour cream
- 2 Tbsp. melted butter
- In a bowl, beat the egg yolks until thickened and lemon colored. Add the pancake mix, salt, and sour cream and stir to combine. In another bowl, beat the egg whites until stiff peaks form. Fold into the yolk mixture.
- Preheat a griddle or skillet over medium-hot heat. When hot, brush lightly with the melted butter. Pour about ⅓ cup of the batter onto the hot griddle or pan for each flapjack and cook each side until golden brown. Serve hot.
