Sour Cream Belgian Waffles
You can add many things to waffles to vary the flavor. Add 1⁄3 cup finely chopped toasted nuts, dried fruits like blueberries or raisins, fresh fruit, or 1⁄4 cup melted chocolate or 2 tablespoons cocoa powder.

- 3 large eggs, separated
- 3 Tbsp. melted butter, plus more for waffle iron
- 3 Tbsp. sugar
- 1 cup milk
- 1 cup sour cream
- 1 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1 1⁄2 cups all-purpose flour
- In large mixing bowl, whisk together egg yolks, melted butter, and sugar and beat until the mixture turns light yellow. Stir in milk and sour cream, then add baking powder, baking soda, and flour; mix just until blended. In small mixing bowl, beat egg whites until fluffy. Fold into the batter. Let stand at room temperature for 30 minutes.
- Preheat waffle iron. Brush lightly with butter. Pour batter into waffle iron, using about 1⁄2 cup at a time. Close waffle iron and cook according to directions until steaming stops. Carefully open the iron and, using a fork, gently pry the waffle off of the iron. Serve immediately.
