Serves: 6

  • 1⁄2 cup packed brown sugar
  • 1⁄2 cup shortening
  • 1⁄2 cup dark molasses
  • 1 large egg
  • 1 1⁄2 cups all-purpose flour
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1⁄2 tsp. salt
  • 1⁄2 cup hot water
  • 1 cup active sourdough starter
  • 2 cups whipped cream

  • Preheat oven to 375°F. Grease an 8-inch pan.
  • In a large bowl, using an electric mixer set on medium speed, beat together the brown sugar and shortening until creamy. Then add the molasses and egg, beating continuously. In another bowl, sift together the flour, ginger, cinnamon, baking soda, and salt. Add the hot water and mix well, then beat the flour mixture into the creamed mixture. Finally, slowly add the sourdough starter, mixing carefully to maintain a bubbly batter. Transfer to pan.
  • Bake for about 30 minutes, or until a knife comes out clean. Serve with whipped cream while still warm.
