Southern Baked Chicken

  • 1 chicken (3 lbs.), cut up
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. coarsely ground black pepper
  • 2 Tbsp. molasses
  • 2 Tbsp. brown mustard
  • 2 Tbsp. cider vinegar
  • 1⁄4 tsp. ground celery seed
  • 1⁄4 tsp. onion powder


  • Preheat oven to 400°F.
  • Rinse the chicken pieces and pat dry. With your hands, rub the salt and pepper over the chicken. In a small bowl, combine the molasses, brown mustard, vinegar, celery seed, and onion powder. Coat the chicken thoroughly with the molasses mixture, using your hands to rub it over the pieces.
  • Spray a roasting pan with nonstick cooking spray and arrange chicken on pan (do not crowd). Bake 40 to 45 minutes, or until the juices run clear. Turn with tongs halfway through baking time.
