Southwest Corn and Black Bean Salsa

This colorful combination of Mexican favorites is perfect as a salsa dip, a topping for tacos, or as a standalone side dish.

Ingredients

  • 1 can (15 oz.) Simple Truth Organic™ Canned Spicy Black Beans, rinsed and drained
  • 2 cups Simple Truth Organic™ Whole Kernel Cut Corn, thawed
  • 1/2 yellow onion, diced
  • 1/2 jalapeño pepper, seeded and minced
  • 1 tablespoon Simple Truth Organic™ Cilantro, chopped
  • 2 Roma (or plum) tomatoes, chopped
  • 3 tablespoons lime juice
  • Coarse salt, to taste
  • Freshly ground pepper, to taste

Directions

  • Mix together beans, corn, onion, jalapeño, cilantro, tomato and lime juice in a medium bowl.
  • Season with salt and pepper and chill until ready to serve.
