Southwestern Pulled Pork Sandwiches
This is a great way to use up extra barbecued pork—make it into pulled pork sandwiches. Serve them with classic coleslaw, pickle chips, and beer.

- 1 lb. leftover barbecued pork loin
- 1 cup cider vinegar
- ½ cup brown sugar
- 1 cup tomato-based barbecue sauce
- 4 hard rolls, toasted
- Place the pork with the rest of the ingredients (except the rolls) in a pot and bring to a boil. Simmer for 4 hours. Remove the meat, and using two forks, pull it apart. Pile the meat on the rolls and spoon any extra sauce over the top.
