Southwestern Quinoa Salad
This nutrient-rich salad is full of southwestern flavors and protein-packed quinoa.

- 2 Tbsp. olive oil
- 1⁄2 tsp. salt
- 1⁄4 tsp. cayenne pepper
- 1⁄8 tsp. ground black pepper
- 3 cups cooked quinoa
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (15 oz.) corn kernels, drained
- 1 large tomato, chopped
- 1⁄4 cup chopped cilantro
- In a large serving bowl, whisk together olive oil, salt, cayenne pepper, and black pepper. Add quinoa and toss well. Add beans and corn kernels and toss well. Fold in tomato and cilantro.
