Souvlaki with Raita
You can serve the lamb rare or medium-rare to suit your preference.

- 1 tsp. olive oil
- 1 lb. diced boneless lamb (fat removed)
- 2 tsp. cracked black pepper
- 1⁄4 cup chopped fresh oregano
- 1 cup raita
- Preheat broiler.
- Season the lamb with pepper and thread on 6 skewers. Broil skewers 5 to 8 minutes, turning often. Transfer skewers to a platter and sprinkle with oregano.
- Serve skewers with raita on the side.
