Souvlaki with Raita

You can serve the lamb rare or medium-rare to suit your preference.

Ingredients

  • 1 tsp. olive oil
  • 1 lb. diced boneless lamb (fat removed)
  • 2 tsp. cracked black pepper
  • ¼ cup chopped fresh oregano
  • 1 cup raita

Directions

  • Preheat broiler.
  • Season the lamb with pepper and thread on 6 skewers. Broil skewers 5 to 8 minutes, turning often. Transfer skewers to a platter and sprinkle with oregano.
  • Serve skewers with raita on the side.
