Mung bean sprouts can be substituted for soybean sprouts, but they aren’t as flavorful.

- ½ lb. soybean sprouts
- 4 cups water, divided
- 2 cloves garlic, peeled and minced
- 2 Tbsp. soy sauce
- 2 tsp. sesame oil
- 2 scallions, sliced, white and green parts separated
- ¼ tsp. salt
- Place sprouts and 1 cup water in a large saucepan and bring to a boil. Reduce heat to low and simmer for 5 minutes.
- Add the garlic, soy sauce, sesame oil, the white parts of the scallions, and salt. Pour in 3 cups water and bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes. Garnish with the green parts of the scallions.
