Spaghetti Squash

Spaghetti squash truly takes on the qualities of pasta noodles. Flavor it with marinara, low-sodium soy and teriyaki sauces, or anything else you traditionally add to regular pasta.

  • 1 spaghetti squash (2 lbs.)
  • ¼ tsp. salt
  • ¼ tsp. pepper


  • Slice squash in half and scoop out the seeds. Wrap each half loosely in plastic wrap. Cook wrapped squash in microwave for 20 minutes on high power. Remove plastic wrap.
  • Using a fork, scoop squash into a medium bowl. The squash should be stringy like spaghetti. Season with salt and pepper.
