Spanish Chicken Fricassee

Fricassees are Spanish stews that typically involve some sort of poultry, although other types of white meat can be used. Its base is usually created with wine or dry vermouth.

Ingredients

  • 1 1⁄2 lbs. boneless, skinless chicken breasts, cut in large chunks
  • 1⁄2 Tbsp. olive oil
  • 1 clove garlic, minced
  • 1⁄2 tsp. all-purpose seasoning
  • 2 tsp. paprika
  • 1 tsp. black pepper
  • 1⁄2 cup white onion, diced
  • 1⁄2 cup celery, sliced
  • 1 cup chicken stock
  • 1⁄2 cup wine
  • 1 cup carrots, sliced
  • 2 Tbsp. fresh minced parsley
  • 3 bay leaves
  • 1 cup Yukon Gold potatoes, cubed

Directions

  • Add all ingredients except potatoes to large saucepan. Cook on medium-high for 10 minutes, stirring often.
  • Add potatoes and simmer for another 15 minutes, or until sauce thickens, stirring occasionally.
