Spanish Rice with Saffron
This vibrant yellow rice is a perfect mini-side to go with small plates.

- 1 cup water
- ¼ tsp. salt
- Pinch saffron threads
- ½ Tbsp. extra-virgin olive oil
- ½ cup long-grain rice
- Combine the water, salt, saffron, and olive oil in a saucepan, then stir in the rice. Bring the mixture to a boil, reduce heat to medium-low, and cover with a lid.
- Simmer for 20 minutes. Do not lift the lid before that! Remove from heat and serve hot.
