Spanish Rice with Saffron

This vibrant yellow rice is a perfect mini-side to go with small plates.

  • 1 cup water
  • ¼ tsp. salt
  • Pinch saffron threads
  • ½ Tbsp. extra-virgin olive oil
  • ½ cup long-grain rice


  • Combine the water, salt, saffron, and olive oil in a saucepan, then stir in the rice. Bring the mixture to a boil, reduce heat to medium-low, and cover with a lid.
  • Simmer for 20 minutes. Do not lift the lid before that! Remove from heat and serve hot.
