Spelt Pancakes with Blueberries

Blueberries thrive in northern climates. Use them to top hearty and delicious spelt pancakes.

  • 3 eggs
  • 1¾ cups buttermilk
  • 1 cup all-purpose flour
  • 2 cups spelt flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1½ cups blueberries
  • 1 Tbsp. powdered sugar


  • In a medium bowl, whisk together the eggs and buttermilk. In a separate bowl, sift together the flours, baking powder, baking soda, and salt; stir into the buttermilk mixture to form a thick batter.
  • Grease a skillet with cooking spray and heat over medium heat. Drop generous dollops of batter onto the griddle. Cook until each side is golden, about 2 minutes each side.
  • Serve warm with fresh blueberries and powdered sugar.
