Spelt Pancakes with Blueberries
Blueberries thrive in northern climates. Use them to top hearty and delicious spelt pancakes.

- 3 eggs
- 1¾ cups buttermilk
- 1 cup all-purpose flour
- 2 cups spelt flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1½ cups blueberries
- 1 Tbsp. powdered sugar
- In a medium bowl, whisk together the eggs and buttermilk. In a separate bowl, sift together the flours, baking powder, baking soda, and salt; stir into the buttermilk mixture to form a thick batter.
- Grease a skillet with cooking spray and heat over medium heat. Drop generous dollops of batter onto the griddle. Cook until each side is golden, about 2 minutes each side.
- Serve warm with fresh blueberries and powdered sugar.
