Spiced Apple Compote
This compote is as delicious as apple pie, and is as good with toast as it is on frozen desserts.

- 2 lbs. tart apples, peeled, cored, and chopped
- ⅓ cup brown sugar
- ¼ cup water
- 2 tsp. ground cinnamon
- ¼ tsp. ground ginger
- 1 tsp. vanilla
- Place all ingredients except vanilla in a medium saucepan, and cook over medium heat. Allow to simmer for about 30 minutes, until apples are very tender and sauce is thickened.
- Remove from heat and stir in the vanilla. Let cool to room temperature.
- Refrigerate, covered, until needed.
