Spiced Apple Compote

This compote is as delicious as apple pie, and is as good with toast as it is on frozen desserts.

  • 2 lbs. tart apples, peeled, cored, and chopped
  • ⅓ cup brown sugar
  • ¼ cup water
  • 2 tsp. ground cinnamon
  • ¼ tsp. ground ginger
  • 1 tsp. vanilla


  • Place all ingredients except vanilla in a medium saucepan, and cook over medium heat. Allow to simmer for about 30 minutes, until apples are very tender and sauce is thickened.
  • Remove from heat and stir in the vanilla. Let cool to room temperature.
  • Refrigerate, covered, until needed.
