Spiced Fresh Fruit Compote
Compotes can be made with a variety of fresh or dried fruit. Delicious fresh fruits that prevent large spikes in blood sugar include stoned fruit such as peaches, plums, apricots, mangoes, and cherries, or berries such as strawberries, blueberries, blackberries, and raspberries, complemented by citrus fruit such as oranges or tangerines.

- 1⁄8 tsp. ground cinnamon
- 1⁄8 tsp. vanilla extract
- 2 Tbsp. orange juice
- 1 cup chopped fresh and dried fruit (such as mangoes, strawberries, raspberries, prunes, and orange segments)
- Whole spices, such as cinnamon stick and star anise pod
- Combine cinnamon, vanilla, and orange juice. Toss with fruit and whole spices and let sit for 5 minutes before eating.
